White Chicken Chili (From Jessica Euting via Kelley Rowley)

4 whole boneless chicken breasts

1 large onion, diced

2 cloves garlic, crushed

2 heaping tsp. chicken bouillon

½ cup salsa

1 tsp. dried parsley

¾ tsp. oregano

1 tsp. ground red pepper

1 ½ tsp. salt

1 ¾ tsp. ground cumin

4 - 15.5 oz cans Great Northern Beans


Cook chicken in boiling water with bouillon added. Cool slightly, remove chicken & shred. Boil broth down to 2-2 ½ cups and set aside. Sauté onion and garlic in a little butter until clear. Add chicken and stir. Add broth and all other ingredients except beans. Simmer 15 minutes, covered. Add beans; simmer 15 minutes, stirring often. Serve with shredded cheese and sour cream.
